Vanilla Sugar

I realize I never went into vanilla sugar. It is exactly what it sounds like. Regular sugar with vanilla bean in it so the sugar is perfumed with the smell and taste of the bean. I use vanilla bean a lot. I like to use it for simple syrup, vanilla buttercream, chai (yes I make my own), yada yada. I use the leftover bean to make the vanilla sugar. After you slice down the middle of the bean and remove the seeds to add to whatever you are making, just drop the leftover pod into a jar of sugar and let it sit for at least a week and voila.
